  1. Combine all ingredients, last of all the mix. Knead until a homogeneous mixture is obtained.

  2. Create 80g balls and leave them to rise for about 1h.

  3. Make classic cuts on the surface and sprinkle with rice/maize flour.

  4. Bake for 25' in a cascade oven, baking at 220° and adjusting the temperature to 200° with steam injection.
