Start with
Knead all ingredients in the planetary mixer using the leaf whisk for 5'; pour onto the floured table with rice flour;

Divide
Break the loaf into 230 g and stretch, laminate, roll as for classic baguette; place in classic baguette pan; rise 60' and cut with the classic odd 3 or 5 cuts;

Bake
Bake in the oven at 240° C for 3 seconds, then lower to 200° C for 20' of closed baking.
