How to make

Primo impasto

  1. Pour all ingredients into the planetary mixer and knead with the hand mixer for 5 minutes;

  2. Place it inside a bowl and let it rise at 28° C for about 12 hours.

Secondo Impasto

  1. Kneading

    Place all the ingredients in a planetary mixer with eggs, soft butter and water, knead for 5 minutes. Pour into a 440 g ramekin. Leavening time 90' at 30° C.

  2. Bake

    First bake at 170° for 40'. Turn over. Second baking 25' with the pullers closed, then open the pullers and bake another 20' at 160°. Take it out of the oven, stick it in and turn it upside down. Then rest
